Takamura Santoku with hammer finish
Thin, razor sharp and affordable; this is the Takamura VG-10 chef's knife. This knife is handmade in Japan and is among our favorite knives.
The knife is made of hard VG-10 steel that is Sanmai forged. This means that two layers of steel are forged around the hard steel. After this, the knife was worked with a hammer (this operation is called tsuchime). This makes the knife hard but not brittle and makes food stick less while cutting.
Because Takamura forges the knives extra thin, they are a great alternative to well-known brands such as Kai and Miyabi. Although these sometimes have a little more flair this Takamura will offer a fine cutting experience.
