The Opinel Parallèle kitchen knives combine a classic design with a hard steel which provides a razor-sharp experience when cutting. The knives are made of Z50CD14 steel that is hardened to 57 rockwell. This keeps the knives sharp for a long time and should they become slightly dull they can easily be made sharp again with a sharpening steel.
The blade is attached to the beech handle with 2 rivets. The knives from the Opinel Parallèle series are lighter than many other knives and have a good balance.
