The very latest sharpening steel from Robert Herder is the "Corundin. It has the highest sharpening quality and the abrasive particles are very fine. It consists almost entirely of high-density aluminum oxides and has a grain size of 600. It is supple yet so "sticky" that a high degree of sharpness is achieved with the finest smoothness at the cutting edge.
Sharpening
Pull the edge of the knife from tip to tip across the sharpening steel. Try to use the entire length of the ceramic. The blade should be at a sharp angle. You will hear a soft, cracking sound and feel that the blade "grips" well, so the movement does not slow down, but it is not too smooth.
Cleaning
As with all ceramic sharpening steels, you will see some wear on the sharpening steel over time. With the included abrasive rinse, that can be removed when wet, such as with an eraser. Then the sharpening steel is ready for use again.
