Are you looking for an affordable Japanese knife? Then we recommend the Kai Wasabi series. They are sharp and reasonably hard. It makes them harder to sharpen than the Nisei and Victorinox, but they also cut better.

Kazoku Kurashikku Koksmes
The most famous knife in its price range. Beautiful design with 32 layers of Japanese damask steel. It cuts effortlessly through almost all ingredients. The blade has a western weight (not too light), making it feel instantly familiar in your hand.
The Olive Forged knives are a must if you want to give an extraordinary-looking gift. Raw forged steel with an olive wood handle. It cuts less refined than Kurashikku and Global knives but offers a nice value for money.
