Tanuki knives from JNS are handmade in Sanjo, Japan. The razor-sharp Shirogami #2 carbon steel is protected by 2 layers of softer carbon steel. Thus, the entire knife can discolor and rust. Like the other JNS knives, they run very thin which makes for a special cutting experience. The blade is finished with a dark kurouchi layer that makes food stick less while cutting.
Nice to know: Tanuki is the Japanese word for the raccoon dog from the fables.
