The Global knives by the Japanese manufacturer Yoshikin have been the most popular Japanese knives for over 30 years. The unique design (developed by knife maker Komin Yamada) together with the famous Japanese sharpness make Global knives the favorite of many (amateur) cooks. The knives are made from Cromova steel which is hardened to 56-58 on the Rockwell scale. This means they stay sharp for a long time but are not as brittle as other Japanese knives. They are also virtually rustproof (but should not go into the dishwasher).
Global knives: Razor sharp sharpening
The knives are sharpened at an angle of 15-17 degrees to make them razor sharp. Together with the thin blade this makes cutting with a Global feel great.
The Handle
The handle has a unique design where the holes are non-slip. This allows the knife to be used with wet hands. The handle consists of two hollow parts which are filled with sand to give the knife a good balance. The knives are divided into 4 series, where the main differences are in the handle.

The series has expanded over the past 30 years and now includes chef's knives, santoku knives, bread knives, fillet knives, deba, sashimi and nakiri knives. But also matching accessories such as knife blocks, sharpening steels, forks and spatulas.

In 2015, after years of research, a new series was released, the Global Sai. Once again, Komin Yamada has developed the knife by merging his vision with the wishes of professional chefs. For example, the knife has been made harder so that it stays sharp even longer. To protect the knife, the hard steel is surrounded by two layers of softer (sus410) steel. These make the knife less brittle and just a little more flexible.
Hammerblow
After this the blade is hammered (this is called Tsuchime). This gives the knife a non-stick effect as air enters between the knife and the ingredients during cutting. This also gives the knife its special appearance.
Ergonomic handle
The handle has also been radically changed. The handle is a bit heavier and larger, so it extends more to the back of the hand. The handle runs seamlessly from the thumb handle to the blade. Ideal for every cook who cuts with the pinchgrip method.

This series consists of forged knives and was specifically created for the European market. Because the knives are forged they are heavier and slightly thicker. They also have a larger handle for better ergonomics.
Global GSF Knives
These are the small knives from the GF series. Often the same type of knives as in the GS series but with slightly more weight.

The newest and best knives from Global.
Made from even harder steel with 2 layers of softer steel around them. A hammer finish to prevent food from sticking and a very ergonomic handle. In our opinion the best Global knives ever and belong to one of the finest series in our assortment.
