The Classic Ikon knife series is one of the most popular knife series in our assortment. People often come in for a different series, but once they've held the Classic Ikon cook's knife in their hands, they won't want anything else.
Wusthof knife with ergonomic handle
The handle is shaped so that it always sits comfortably in the hand. This, with the excellent balance, makes it a pleasure to work with the knife even after long cutting times. The handle is made of POM (Polyoxymethylene). This is a very durable, black plastic that will not crack and is dishwasher safe (although we always recommend washing the knife by hand). The handle is mounted jointless with three rivets making it absolutely hygienic.
Forged steel that is easy to keep sharp
The blade (cutting part) is forged from a single piece of stainless steel (Chrome Molybdenum Vanadium Steel). After being processed by Wusthof this steel has a hardness of 58 Rockwell. This hardness ensures that the knife (that comes out of the box razor-sharp) stays sharp for a long time, but also that it can be sharpened. Did the knife get blunt after a while? Just sweep the blade a few times on a sharpening steel to regain its sharpness. The Classic Ikon has no bolster between the blade and handle, so the cutting edge is sharp from edge to edge.
Laser controlled sharpness
The knives from the Wusthof Classic Ikon series are razor-sharp. This is due to the extensive sharpening process carried out at the factory. The knives are sharpened by a row of robots several meters long, each using a different grit/grain. Each knife is checked by laser with the PEtec (PrecisionEdgeTechnology) system for the correct sharpening angle. This ensures that each knife has the same perfect sharpness.
