The stylish knife is made of Aogami Super steel and has a simple but beautifully finished design. Highly recommended for the cook who wants to make the switch to carbon steel knives with minimal maintenance.
About this series
Aogami Blue Paper Super Steel is the superlative of Blue Paper Steel #2. Additional additions of chromium, tungsten and carbon make the blade of this variant even harder and tougher. In other words, the blade is less vulnerable and stays sharp even longer. Like Blue Paper Steel #2, it can be sharpened to extreme sharpness. Combined with the thin blade, this produces a knife that cuts like no other.
Characteristics of Aogami Super steel
The core is made of Aogami Blue Paper Super Steel. This is a pure steel with special qualities. The blade is very hard (between 63 and 64 HRC) and can be sharpened very sharply. It stays sharp much longer. Aogami steel is also remarkably easy to sharpen.
The hard steel is protected by 2 layers of stainless steel with a polished finish.
Oval Handle
The handle is shaped like an 0 and is made of Rosewood.
Good to know
This is a knife for the enthusiast, uemand who handles it carefully. Aogami is not rustproof and the knife should therefore be wiped with a cloth immediately after use. This way no brown rust layer will develop, but over time the knife will acquire a patina layer. This blue-gray layer gives the knife character and forms a natural protective layer.
