Meet the unique Tosa Tsukasa knives, hand-forged in the Tosa region of the island of Shikoku, Japan. These rustic, hand-forged knives have a distinctive, slightly curved profile and a slightly narrower blade. They are sturdy so you can use them for almost any cutting task but are refined enough for cutting small produce such as fruits and vegetables.

Shirogami #1 Carbon steel
This series is made from Shirogami #1 steel. This is the purest variant of carbon steel. The advantage of Shirogami is that it can be sharpened sharper than other types of steel. It is also easy to sharpen yourself.

Kurouchi Forging
The knife has a kurouchi finish (which is the dark forging layer). This protects the knife somewhat from rust although you should clean and dry the knife well after use. The whole knife is carbon fiber so it will also discolor (patina layer). So make sure you maintain the knife well.

The Tosa Tsukasa Kurouchi knives are highly recommended for anyone who wants to cut with the sharpest steel and is not afraid of a little maintenance. The knife comes quite sharp out of the box but becomes really razor sharp if you sharpen it yourself on stones.
