Takamura Santoku with rock-hard steel
Takamura's Chromax knives are made of rock-hard steel that does get prone to rust. With a hardness of 64-65, these knives are much harder than most Japanese knives. The downside is that you do have to keep the knife well dry.
Although it is less prone to rust than normal carbon knives, the knife will still discolor (patina layer). So it is a knife for the enthusiast who likes to maintain his knives well.
