Winner Good Design Award

These handmade knives by Tadafusa stand out for their unique design. The third-generation blacksmith (from Sanjo, Niigata) partnered with industrial designer Fumie Shibata for this series. The result is a modern, stylish knife that feels fine in the hand and cuts wonderfully.

This model is the santoku, a universal knife for almost all cutting tasks. The blade is worked with a hammer that allows air to get between the knife and the food while cutting. This makes it stick less, and it looks very cool.

The knife is forged from SLD steel. This type of steel has a high carbon content (1.5%) which allowed it to be extra hardened (60-62 Rockwell). By adding 11-13% chromium, the steel is still rustproof.

Stainless Sanmai
The hard core is protected by two layers of soft stainless steel. The knife stays sharp for a long time and is easy to sharpen yourself. Almost similar to a carbon knife but without the maintenance.

Thermally treated wood
The handle is made of thermally treated chestnut wood. This makes it impervious to moisture and bacteria. The handle flows nicely into the stainless steel head.

The knife comes in stylish cardboard packaging.
