VG10 steel
This knife is made from VG10 steel. This is one of the most popular stainless steels in Japan. VG10 is easy to clean, does not rust and stays sharp for a long time. VG10 is an excellent grade of steel, ideal for starting a high quality Japanese knife set.
Stainless protective coatings
The hard core steel is protected by several layers of stainless steel. This makes the knife less brittle and slightly more flexible.
Tsuchime
Tsuchime, which means "hammered", is made from steel that has been forged and hammered in a unique pattern. This technique gives the knife a unique style and the grooves make cutting easier. They allow air to pass between the knife and the food, making it less sticky when cutting.
Kurouchi
The dark Kurouchi finish on this knife gives the blade a rough texture that makes food less sticky. The black coating will wear off over time, so don't expect it to stay black forever.
Damascus
This knife has several layers of steel to protect the core steel. These layers are called damask and are visible on the blade in unique patterns. They show the craftsmanship of the smith and give the knife a special appearance.
D-shaped handle
The D-shaped Wa handle is beautiful and precise. The handle is oval, like the Wa handle, but has a flat edge that gives it a "D" shape. This design gives right-handed people a better grip. This knife is not suitable for left-handed people.
