An affordable chef's knife made entirely of carbon steel from master blacksmith Shiro Kamo.
- Aogami Super
- Carbon Sanmai
- 63:64 HRC
- Walnut handle with horn head
This series is made of Aogami Super steel, one of the favorite steels of Japanese blacksmiths. This is a carbon (carbon) steel that must be thoroughly washed and dried after use. The hard core is protected by two layers of softer carbon steel. These layers have a black forging layer (Kurouchi) that makes food stick less. The kurouchi layer will become less visible with use, though. The knife looks rustic but has a razor-sharp polished core.
The handle is made of walnut in an 8-angle (octagon) shape. The head is made of black buffalo horn.
