Traditionally handmade garasuki of shirogami #2 steel
A superb knife for boning and cleaning meat and poultry. A garasuki is a thicker and heavier variant of a honesuki.
This one-handed garasuki forged from Shirogami #2 White paper steel. Shirogami #2 is a rusting steel known for its sharpness. The knife must be dried after each cut or it will discolor. The advantage is that this knife can be sharpened sharper than any other steel.
The handle is made of Japanese Maple wood with a head of buffalo horn giving it a traditional look.
