For fans of pure steel, this is one of the finest knives in our collection. Handmade by master blacksmith Itsuo Doi, son of famous master blacksmith Kejiro Doi.
Aogami #2 steel
The knife is made of Hitachi Yasuki Blue #2 Aogami steel. This pure steel is not rustproof but is and remains sharper than stainless steel.
The steel is hardened to 64-65 Hrc Rockwell, making it rock-hard. To protect the hard core, the knife is sanmai forged with 2 softer steels folded over the hard core for protection.
Luxury handle with buffalo horn and African wood
The handle is also special. For example, it is made of African Ebony with a silver Alpaca Ring between the handle and the bolster of real buffalo horn. The traditional octagonal shape ensures that you always have a good grip while cutting.
Kiritsuke Bunka
The blade is shaped like a bunka. You can think of this as a tough version of a Santoku. Because the knife ends in a Kiritsuke shape you also have a sharp point that allows you to cut very precisely.
This knife is for the true enthusiast who wants the best steel in the finest execution.
