One-sided sharpened Yanagiba for left-handed use.

This model is specially made for left-handed use.

Yanagiba are traditionally forged from rusting steel such as Shirogami and Aogami. The reason for this is that these steels are easier to sharpen. A Yanagiba should always be at its sharpest.

The disadvantage of these steels is that they can rust and discolor. Thus, they require quite a bit more maintenance. This GinSan Yanagiba is especially for those who don't have time for that.

GinSan Silver Steel is a stainless steel that has a higher hardness and stays sharp longer than knives made of VG10 or AUS 8/10 steel. This gives you the same cutting capacity as a White/Blue steel but now without the maintenance.

The handle is made of magnolia giving it a traditional look. A great knife for sashimi/sushi that requires hardly any maintenance.
