The Takayuki 45 Layer series is (as the name suggests) made of 44 layers of damask with a core of AUS-10 steel. These knives are razor sharp, lightweight and stay sharp for a long time.

Japanese hammered steel
The steel has had a hammer machining (Tsuchime in Japanese) after forging. The dimples make food stick less while cutting. This combined with the thin blade allows for effortless cutting.

Oak handle
The handle is made of oak wood and is traditionally shaped in an octagonal shape. This shape has been used in Japan for centuries and ensures a good grip even with wet hands.
