Ryusen will celebrate its 70th anniversary in 2023 with the launch of an exclusive new knife series. Introduced early in the year, the series combines aesthetic beauty with superior specifications. Ryusen himself describes it as a "High grade model that pursues brilliant beauty and sharpness." Under the name Oukokuryu, Japanese for "black dragon," Ryusen introduces this line as their ultimate premium range.

The Super Gold 2 steel used, embedded in multiple layers of stainless steel and hand-forged, gives each knife a unique depth pattern. The handle, made of stabilized poplar wood stained in a vacuum, is both sturdy and striking with its natural knots. This handle is highly resistant to water and temperature fluctuations and offers excellent comfort.

Santoku

Santoku Bochu (or simply Santoku) knives are utilitarian. The name translates to "three uses," demonstrating the knife's universal ability to perform various tasks. Excellent for cutting meat, fish, vegetables, and fruit, it offers a more compact alternative to a Gyuto, with a shorter but slightly wider blade. Ideal for mincing, dicing, and slicing.

SG2 steel

Made of SG2 steel, a powdered steel that is harder than VG10 and maintains a longer edge. Because it is stainless, you don't have to worry about maintenance and you can sharpen it to a higher grit than VG10 steel.

Damask

This knife has multiple layers of steel that protect the core steel and add some elegance. The damask is visible in unique designs and patterns on the blade, showing the skill of the blacksmith.

Octagonal Wa Handle

The octagonal handle is an excellent choice for chefs who carve regularly. The octagonal shape offers superior grip and control while cutting, even with wet hands.
