Nigara Hamono has its origins from Samurai times. For over 350 years, this family has been making swords and knives. The centuries-old tradition has been passed down from father to son, and the current (8th) generation blacksmith is Tsuyoshi Yoshizawa. He is mentored by his father Toshiju and makes exceptional knives.
This is the Aogami Super series by Nigara Hamono. An extremely tough series with a dark kurouchi finish and a hammered pattern. The knife has a raw design but is carefully finished and up close you can see how much attention each knife has received.
The knife has a core of Aogami Super Carbon steel. One of the finest carbon steels that can be ground extremely sharp. With a hardness of 63 Rockwell, this knife also stays sharp for an extra long time. The core is protected by 2 layers of softer stainless steel with the special finish. The dimples in the protective layers make food stick less while cutting.
The knife must be dried well after use or the core may rust. With use, the steel will develop a patina layer that discolors the core and protects it from rust.
The knife is constructed with an octagon handle of walnut with a head of horn. This is a waterproof wood that requires very little maintenance. A special knife for the enthusiastic (hobby) cook who loves unique knives.
