With the Miyabi 5000MCD67 series, they didn't skimp on anything. They used the one of the hardest steels combined with a stunning black wooden handle. Each knife is completely handmade and sharpened in the same way as the samurai swords of old.

Japanese Gyutoh

This is the Gyutoh from the Miyabi Black series. This is the Japanese version of a European chef's knife and is suitable for cutting meat, fish, vegetables and fruit.

Handmade Japanese knives

The knives are made entirely by hand in Seki Japan. They are made from Micro Carbide steel that undergoes a FRIODUR treatment. This involves first extremely heating the steel and then cooling it in ice water (- 196c). This gives the steel an extreme hardness of 66 HRC Rockwell

132 layers Flower Damask

Because the steel is so extremely hard it also becomes a lot more brittle. To protect the steel, 132 layers of Damast steel are folded around it in a Flower (flower) design.

Damask is a combination of hard and soft stainless and nickel steel types forged together. This provides perfect knife protection and gives each knife a unique design.

Sharpened like a samurai sword

The knife is "Honbazuke" (means true Japanese cut) symmetrically ground and polished at an angle of 10° degrees per side. This provides a katana polished cut just like samurai swords.

Black Ash handle

The handle is shaped like a D ("D-handle"), giving it a perfect ergonomic shape for a good grip and to effortlessly keep cutting for an extended period of time. (Less suitable for left-handers)

The handle is made of Black Ash wood (Fraxinus nigra). The cap on the back of the knife provides a balanced finish and the mosaic pin in the handle gives the knife the finish it deserves.
