The Misono UX10 Gyutou combines the best of Japan and Sweden.

This is the 24 cm Gyutou / Chef's knife from the UX10 Series. The favorite knife for the professional chef.

The Gyutou is the Japanese version of the European chef's knife. The knife is suitable for all cutting tasks including cutting meat and vegetables. The long blade allows you to quickly cut through large quantities of vegetables. Be careful not to use the Misono for chopping chicken and meat with bones or frozen food. This will damage the knife. With this knife, you should cut properly and thus not pry or chop.

The Secret Knives of the Professionals

In the professional chef world, they have been importing them for years. The Misono UX10 is a Japanese knife made from the best Swedish steel. This steel is known for its pure skin and the ability to sharpen it razor sharp. The knives are forged by Misono to 60 HRC Rockwell and hand sharpened in a 30/70 ratio. This means that the knife is sharpened at a wider angle on one side than the other. This allows them to sharpen the knife even sharper namely up to 10-12 degrees on the 30 side and 20 degrees on the 70 side. So this knife has the ultimate sharpness, you have less burrs and it stays sharp longer.

Maintaining your Misono knife.

Even Misono knives become less sharp after a while. You can maintain them well with a ceramic sharpening steel (recommended) or a diamond steel (also works well but is coarser). Of course, we recommend sharpening the knives with a whetstone. This way you have more control over the sharpening process and you can sharpen the knife in its original 30/70 ratio. This means that for every 7 sharpenings on one side you need to do 3 on the other side. This again makes clear how special the knife is and how sharpening on a whetstone is the best option. Of course, you can also have us sharpen the knife in the traditional Japanese 50/50 ratio. This makes it easier to sharpen the knife yourself.
