The Misono 440 series is the result of years of collaboration with professional chefs. The result is a hard (59 Rockwell), thin and razor-sharp knife. By using specially developed 16 Chrome Molybdenum steel, the knives have better rust resistance, long-lasting sharpness and are easy to sharpen.
