In the large Japanese knife city Seki, there is a relatively small knife factory where unique knives are manufactured. Misono knives are distinguished by the special steel that is forged and tempered in-house. Their special way of sharpening (on a 30/70 ratio) assures a sharpness that you will not find in many other brands.
In contrast to many other factories, all processes for making a knife are done by Misono itself. You can see this in the finish and notice it when cutting. Guaranteed to keep its edge longer than other knives in this price range.
The absolute favorite in the UX10 series. The pure Swedish steel ensures long-lasting sharpness with minimal maintenance.
For those who love carbon knives, we recommend the Carbon series. They require a little more attention in terms of maintenance, but remain sharp for longer than the other series.
