For fans of pure steel, Masakage's Yuki line is highly recommended. This is because the knives are made from Shirogami #2 white steel. This is pure carbon steel hardened to 62:63 Rockwell. To protect the hard core, 2 layers of softer stainless steel are folded over the knife. The result is a knife that is razor sharp and very easy to sharpen yourself.

Hand forged by Kato San
Each knife is hand-forged by master blacksmith Yoshimi Kato. He is the son-in-law of Hiroshi Kato and learned the craft from the famous master blacksmith. The knife has a Nashiji finish reminiscent of snow. That's where the name comes from because Yuki is Japanese for snow.

Magnolia handle
The handle is made of magnolia and with a collar of red pakka wood. The combination is reminiscent of winter and so the theme of this knife is complete.

Proper care
The steel must be properly maintained. For example, it should be dried right after use and rinsed off after cutting acidic products. The hard core will discolor over time as a patina layer forms on it. This layer gives the knife character and protects it from rust.

What we think.
Sharply priced knife with exceptional steel. A knife for enthusiasts who take good care of their knives. These knives do not have the same high finish as more expensive competitors. But they stay sharp longer and are easier to sharpen yourself.
