Razor-sharp Shirogami White #2 steel

For this series, he uses Hitachi Shirogami White #2 steel. This is a rusting steel known for its purity. Shirogami steel can be truly razor-sharp and cuts like no other.

To protect the hard core (62 Rockwell), 2 layers of softer stainless steel are folded over it. This protects the knife from rust and makes it a little more flexible. The dark Kurouchi finish makes the knife tough and rustic.

The Shirogami steel will discolor with use due to the patina layer formed on it. This layer protects the steel from rust but still you will have to dry it well after each use.
