Mac Professional Chef's Knife

Superior steel
The Mac professional knives are made of forged German Molybdenum steel with higher carbon content. The knives are hardened at 58-60 HRC. With this hardness, they are actually in between European and Japanese knives. As a result, they stay sharp longer than European knives and are less brittle (prone to damage) than more expensive Japanese knives.
Ergonomically designed and lightweight
The blade of the Mac Pro knives is shaped like a French/Japanese knife. This means that the knives do not have a very wide belly. This makes the knives more suitable for the cutting technique where you push forward instead of rocking. Many professional chefs like this better because it cuts faster and less tiring.
