Sharpening stones give the best results. The large surface area of a stone means that you can achieve results relatively quickly in exactly the right place, i.e. at the fold/cut. Also, there are different grain sizes available, so you can start with the right coarseness. A good start is half the work. This is certainly true when sharpening. And that means that a blunt knife first needs to be sharpened on a coarse grain before it can be sharpened on a fine stone. How coarse you should start with depends on the condition of your knife.
All our whetstones are used in combination with water. You can also call them waterstones. The water allows the blade to move easily over the stone and removes the steel particles so the stone continues to sharpen effectively.
