A Japanese chef's knife at a very competitive price. This is the kiritsuke with a blade length of 19.5 cm. A chef's knife is suitable for almost all cutting work.

Japanese steel

The sharpness of a knife is determined by the steel and the method of sharpening. This knife is made of Japanese AUS10 steel. A competitor of the VG10 steel with almost the same properties. AUS10 steel is hard and stays sharp for a long time. The high hardness (60-61 hrc) the knife can be sharpened extra sharp (at 15 degrees). Also make the blade extra thin, allowing it to cut with great ease. cutting.

The hard core is protected by 3 layers of steel. These softer layers protect the hard steel, making the knife less vulnerable. The middle section is sandblasted making it dull. This creates a stunning contrast to the high-gloss finish on the rest of the knife.

As a final step, the knife is hammered, the pattern obtained is called tsuchime. This hammering gives the knife a characterful finish and makes food stick less while cutting.

The handle
The handle is made of pakka wood with a blue (royal blue) color. Pakka wood is made by combining wood and plastic. The result is the warm appearance of a wooden handle without the maintenance. The striking color makes this knife a work of art.
