The Kai Tim Mälzer Kamagata is the result of already the third collaboration between Kai and Top Chef Tim Mälzer.
With this series they wanted to appeal to the novice chef/hobby cook. It had to be an affordable series for anyone who wanted to get in touch with Japanese knives without spending hundreds of euros.
But she did not want to make only standard models so that also the enthusiast could get special knives in an affordable way. The result is the Kamagata series.
The models are inspired by the Japanese Kamagata blade which is a vegetable knife with a straight blade. The knives are made of Japanese 1.4111 steel that is hardened at 58 Rockwell. This means that the knives could be sharpened at a sharp angle and remain sharp for a long time.
The handle is made of POM so it requires no maintenance. A special series and a nice entry into the world of Japanese knives.
