The santoku is the most widely used knife in Asian cuisine. In terms of design, it is a combination of the European chef's knife and an Asian vegetable hatchet. This combination makes the santoku a very versatile knife that can be used when cutting meat, fish, vegetables and fruit. The main difference from the chef's knife is that a santoku is usually slightly smaller (in this case 18 cm) and rocks just a little less.

Kai Shun Premier
The Kai Shun Premier Tim Mälzer knife series is the perfect fusion of Japanese and European knife styles. Designed in collaboration with top chef Tim maltzer, the knife has a sturdy European wooden handle that fits perfectly in the hand in terms of ergonomics. The blade itself is made of rock-hard Japanese steel and has a damask alloy. The blade is finished with a manually applied hammer finish (Tsuchime). This gives the knife a unique look and will make fruits and vegetables stick less while cutting. The combination of rock-hard steel, a thin blade and the sharp angle of 15 degrees ensure that these Japanese knives from Kai stay sharp longer.

Japanese knives with rock-hard steel
The Kai Shun Premier knives use the same steel as the Kai Shun Classic. The VG-Max steel is a rock-hard Japanese steel, which can be sharpened very sharply and also stays sharp for a long time. Over the rock-hard VG-Max steel, 32 layers of damask steel are folded. This ensures that the knife is protected from damage, falls and rust and provides more flexibility in the blade. Then the knife is hand-finished with a hammer finish for a tough look.
East meets West
A sharp knife needs a handle that is easy to handle. Kai and Tim Mälzer chose a handle inspired by the European style. The handle is made of brown walnut and is ergonomically designed. Subtle curves and the symmetrical shape make the knife usable by both left- and right-handed people. At the end of the handle, the knife is weighted to perfect balance. The logo completes the design.
