The sharp blade
The blade is made of 1K6 Japanese steel with a hardness of 58 HRc. This hardness ensures that the knife remains sharp for a long time yet is easy to sharpen yourself. The knife is factory sharpened on one side and cuts effortlessly through sushi and sashimi.
Handle
The handle is made of stainless (18-8) steel and has diamond-shaped grooves. These grooves ensure that you always have a good grip, even when your hands are wet.
