Japanese Knives - Maintenance and Tips
Japanese knives are often made of tough and thin steel, which cut more delicately and maintain their sharpness for a longer time. There are, however, also some disadvantages.
The most significant disadvantage is that they are fragile. The rigid steel will break rather than bend. So never cut products such as meat with bones, frozen products, cheese, or hard bread crusts.
But even with vegetables, it can occasionally go wrong. A sizeable hard pumpkin or a clove of garlic with a hard piece can cause the knife to chip.
Good cutting technique
The proper cutting technique is essential here. Never cut with a prying motion but in a smooth straight downward motion to prevent sideways tension on the blade. This technique also allows you to cut harder vegetables.
Don't scrape
Finished cutting your ingrediënts? The don't use the sharp side to scrape the food together. Turn your knife around and use the backside of the blade. This will protect the sharp edge from wear and tear.
The right cutting board
The quality of the cutting board is important. The correct material is softer than the steel of the knife. We recommend plastic or softer wood cutting board. Softer materials have more flex which is better for the edge of your knife.

Knife care and storage
After use, wash the knife by hand. Use the soft side of a sponge, water, and a little soap. Dry it well, and then store it safely. You can choose a knife block or a magnetic strip on the wall. Don't have room for this and want to keep knives in a drawer? Then always use a knife protector or store them in the box provided.

It may seem that the knives are incredibly fragile. But by following these tips, you will enjoy your Japanese knife for years to come. We'd instead give a little too many tips than just too few.
