Hatsukokoro's Irodori knives stand out for their colorful damask patterns. This effect is created by combining carbon steel (aogami #2) with copper and brass. The forged knife is then machined so that it has a matte finish. The knife is finished with a Japanese birchwood handle in an octagonal shape (octagon). An exceptional knife that stays sharp longer than knives made of stainless steel and is also easier to sharpen. However, the knife should be cleaned and dried well after use.
