Hatsukokoro's Hap40 knives are made in Seki Japan. Hap40 is a semi stainless steel that can be forged much harder than the other steels. It is up to the blacksmith to determine the hardness by adjusting the hardening process.
For this series, a hardness of 64 HRC was chosen. This is hard enough to stay sharp for a very long time but keeps the knife from becoming too brittle. It is also easy to sharpen yourself. Highly recommended for the chef who sharpens his own knives and wants them to stay sharp for as long as possible.
