The Hatsukokoro Ginsou series offers a stunning and deep dark Damascus pattern that is immediately striking. The knife is built around a core of Ginsan 3 steel (also known as Silver #3), a special type of steel that combines the sharpness and ease of sharpening of carbon steel with the ease of maintenance of stainless steel. This means that with normal use, the knife does not rust and is easy to maintain.

The knife is refined in every detail. The silky smooth polishing of the blade, combined with the carefully crafted choil and back, not only provides a luxurious look but also a smoother, finer cutting experience. In addition, the knife has a hand-carved signature on the blade

  • Ginsan Stainless Steel
  • 61-62 HRC Rockwell
  • Stainless Damask
  • Ebony handle

Santoku

Santoku Bochu (or simply Santoku) knives are utilitarian. The name translates to "three uses," demonstrating the knife's universal ability to perform various tasks. Excellent for cutting meat, fish, vegetables, and fruit, it offers a more compact alternative to a Gyuto, with a shorter but slightly wider blade. Ideal for mincing, dicing, and slicing.

Ginsan Steel

Made from Ginsan steel, this knife is pure stainless steel with a high carbon composition. It's designed to cut and sharpen like carbon knives, yet is as easy to maintain as stainless steel. Normal care prevents rusting and patina formation.

Damast

This knife showcases multiple layers of steel protecting the core steel, called damask, visible in unique designs and patterns on the blade, demonstrating the blacksmith's skill and adding elegance to the kitchen.

Octagonal Wa Handle

Sophisticated and practical, the octagonal Wa handle is an excellent choice for chefs frequently at the cutting board. Its traditional design provides the best grip while cutting and chopping, even with wet hands.
