Cold smoking not only provides a delicious smoky flavor, but with dry salting it also ensures a longer shelf life. Cold smoking is done at a temperature below 25 degrees. The cold smoke generator of Barbecook is designed to generate smoke for up to 7 hours, provided you use the accompanying wood dust. If you choose other wood dust, the results may vary.
The smoke generator can be used in a barbecue with lid or in a smoker. Although it is cold smoking, a small part of the generator contains smoldering smoke dust. So keep this in mind when smoking the ingredients.
